PRAWN AND AVO SALAD WITH RUBY GRAPEFRUIT
Inspired by a Martha Stewart recipe
YOU WILL NEED:
1 large ruby grapefruit
1 large ripe Fuertes avocado pear
½ English cucumber, cubed
1 bag salad mixed leaves washed
1 red onion finely sliced
12 grilled butterfly prawns ( Woolworths sweet chili butterfly prawns, to be Cheap Luxury compliant, watch out for specials!)
2 TBS White balsamic vinegar, or white wine vinegar
½ cup Lemon infused olive oil (from Olive Tap at Food Lovers Market)
1 TBS mild mustard
Salt and freshly ground black pepper
1 grated garlic clove.
- Heat the grill and grill prawns for 5 mins
- In the salad bowl, place mustard, oil, vinegar, garlic and seasoning
- Peel grapefruit with a sharp knife removing all the pith and slice the grapefruit into 1 cm slices then cut slices into 1/8th
- Add ingredients to the dressing in the bowl, add lettuce last. Reserve the prawns
- Stir it all together with the dressing till well-coated
- Garnish with the prawns
- Serve immediately
To make a vegetarian version omit the prawns and add cashew nuts and feta.
