This soup has been our winter favourite and it is not to late to give it a try, it is 100% vegetarian so it is perfect for a Meat-free Monday:
MINESTRONE
YOU WILL NEED:
1 red onion chopped
1 carrot grated
1 potato peeled and chopped
2 cloves garlic grated
2 sticks celery chopped
1 TBS sugar
½ cup chopped fresh oregano
1TBS olive oil
Fry the above lightly until transparent
Add: 1 tin baked beans
2 tins chopped tomatoes
1 tin white cannellini beans drained and rinsed before adding
1 litre of clear homemade stock or 1 litre of water.
Add this slowly and check for consistency. Do not dilute too much.
Salt and pepper to taste
Grated Grana padano cheese or Parmesan
Cook until veggies are soft about 20 minutes.
Adjust seasoning and serve with a tps lemon infused olive oil or any good olive oil (optional) as well as a good sprinkle of cheese and a dash of peppadew seasoning if you have it.
If you want to add pasta or rice to this soup, cook it separately and add to soup bowl before pouring on the hot soup. If you add it while cooking it becomes mushy.
